2. BALTHAZAR, PERTH

An institution showcasing modern Australian cooking, Balthazar offerings have continued to evolve since its opening in 1998. Helmed by Chef Luke Wakefield, Balthazar offers contemporary cuisine using premium local ingredients that have become crowd-pleasers. Make sure to try the classic risotto with an added twist, kangaroo loin with berry coulis or the pork belly served with grilled scallop and pineapple. For dessert, don’t miss out on a truly Australian invention – a triple-stacked glazed cronut and all washed down with some delightful bottles of regional wine. 3. VOYAGER ESTATE, MARGARET RIVER REGION

Famed for its sprawling vineyard and one of the best exports of Margaret River, Voyager Estate does not disappoint when it comes to classic seasonal cooking. Experience their degustation menu paired with vintages from the estate, elegantly presented by Head Chef Santiago Fernandez. 4. LIBERTE, ALBANY

Liberte makes for a great evening after whale watching in Albany. Influenced heavily by chic Parisian restaurants, chef-owner Amy Hamilton gives a fresh twist to local produce by combining French and Vietnamese cuisine. Don’t be intimidated, the combination results in some delectable sharing plates and it’s hard to resist ordering everything from the menu. Try the ‘Crack Noodles’, chilli crab and garlic noodles, yummy crispy chicken bao or the steak tartare served with rice paper, which all will have you and your dining companions eyeing for the last bite.
